Set Menu (Changing Items)

There is a customer who has a set menu configured in a takeaway.   It works fine however, they state they would like the function to be able to replace menu items from the set menu if a customer requires it changed.

I was just thinking of a price shift so it sets a £0 price allowing them to choose from (a starter for example).

All Ideas welcome.
